Saint-Emilion’s first historic wine bar, L’Envers du Décor was founded in 1987 by François des Ligneris. It was taken over in February 2017 by the Perse family, owners of Château Pavie – 1er Grand Cru Classé “A”, Hôtel de Pavie – 5* Relais Châteaux – and La Table de Pavie – 2* MICHELIN.

Since arriving in Saint-Emilion in 1993, the Perse family has gradually developed an ecosystem guided by a love of beauty and the exceptional. The wines – Château Pavie, Monbousquet, Pavie-Decesse, Bellevue-Mondotte, Clos Lunelles and Esprit de Pavie, the La Clusière PDO Les Baux-de-Provence olive oil and the Pavie honey from the estate’s own beehives – all share the same commitment to quality and care for the land and those who work it.

Today, the Perse latitudes brand links these different activities together like so many geographical and symbolic landmarks, and gives them a profound meaning: to know how to look at where the world is beautiful and take care of it so that it gives the best of itself.
